Here's a dinner I prepared last week, fun stuff for me:D
Appetizer: Seafood Galantine

Soup: Butternut Squash and Apple Chowder

Salad: Greek Salad on Frisee Lettuce
Entree #1: Beef Tenderloin Medallions w/Prawns, compound butter, port wine glaze, saffron rice, broccolini and a carrot timbale
Entree #2: Mahi Mahi w/Fruit Salsa

LOL. I'm not much different when cooking for myself but I get paid to cook for others;) :D I did make pizza dough today:p

I'm the banquet chef at a continuing care facility, old people like to eat good to:p I was trained in the classical techniques and have worked at upper end restaurants;)

With other responsibilities and distractions at work it took about 2 1/2 days. If all I had to do was that dinner, probably a day and a half.

I mentioned french just because it looks alot like the food we used to make when i worked at a french restaurant. People dont understand how long it makes to truly make and prepare all of the food. Every friday night when i went to work at 3 pm straight to school i spent about the first hour making holandaise (sp?) Why? because they didnt want to use stuff they could just buy at the store. I guess thats why they thought charging $40 a plate was reasonable though :rolleyes:
do you get to wear those real sweet chef hats?:D

i like the tenderloin medallions and the rissotto mmmmm
i make a killer creamed seafood tortallini
crab,shrimp,scallops and sometimes lobster if i have it ,in a cream sauce over torts
let me tell you that is some goood chizzle but it takes forever to make

Old folks home are eating better then I am, I think I will retire this week and go live with them..
