I'm sure this has been asked many times before, but i cant find it anywhere. So what is the 89 clutch update for the 250r. I have a 87 250r, what all parts do i need to do the update? How does this update help?

It replaces the clutch actuating linkage. It replaces the old ball with the newer style with needle bearings and some other goodies. It also includes a new pressure plate.
Just go to a Honda dealer and ask for the 89 clutch update. Honda puts out an actual kit (i forget the part number, it's been so long since i did mine). It was like $60.

The clutch update kit consists of a new preasure plate, rod, some new cap assembly, and a needle bearing.

The cap and ball in the older setups is more failure prone and wears faster. I seized the ball bearing and rod together twice in my R. The 89 update feels much better too.
