Go with a 8 plate kit, it'll help put the power to the ground.

would there be any diffrance between a 7plate clutch and an 8 plate clutch on a motor with the exact same mods?

when i went from my stock clutch to the 8-plate setup, the 8 plate seemed like it make the clutch much more usable. its hard to explain. however, the bike also want to stall easier with the 8 plate set up when taking off.
