I am running a wb cam, K&n filter, and fmf exhaust with about 8 plates on it and i am constantly carbon fouling spark plugs. Any suggestions on jetting my bike to run leaner.

are you running stock jets?? i am not sure the stock jet sizes in a 300ex either, so mention those sizes if you have different ones it.

if it dies when your own the gas at various speeds and rpm's, i would try to take the carb off and clean it. make sure the fuel line isn't clogged. make sure your not low on fuel and your gas is in the "on" position. also, make sure your not running with the choke on. while your at it, i would go up a couple sizes on the mainjet to compensate for your mods.

wouldn't getting a bigger main jet make my fuel richer? And would it make me stop fouling plugs

a bigger jet would make you richer. however, there is no way your too rich on your stock jets unless it is extremely hot and at a very high altitude. you could first try getting a new plug. i have a feeling your not flooding your plug when your riding but when you try to start it back up is when your dumping the fuel on the plug, making it dark and wet. however, there has to be a reason its dieing, and you need to figure out why it is doing that first. did you ever mess with your fuel skrew?

i put a new plug in every time and i pull it out and its black

was it black after it was running and they you shut it off??? or was it black after it died?? if you tried to start it before you checked the plug, it probally will be black. try this:

get the bike up to normal temp. let it idle for a minute or so without giving it any gas. shut it off and check the plug. take note on the color. put it back in take the bike out and run it around 1/2 throttle for a good distance through all of the gears. pull in the clutch and quickly shut it off as you are going. check the plug and take note on the color. put it back in and take the bike out again but run it at full throttle through all of the gears until you reach full top speed. pull in the clutch and shut it off quickly as your at top speed. check the plug and take note on the color. do these 3 tests and let me know if your plug is black on any 3 tests. if it is rich at idle, your rich on your fuel skrew and/or pilot jet. if your rich at 1/2 throttle, your clip on the needle needs to be moved up a position. if your rich at full throttle, your mainjet is too big. be careful as the engine and plug will be hot. good luck
