i have a 2005 trx450r, the stock sprocket ratio is 14 front and 38 rear.

my mechanic put 15 tooth in the front and kept 38 in the rear.

he said that while other racers are topped out ill go flying by them.

but wont this give me a slower start???

what is the best sprocket ratio to run?

Impossible to tell you what to run without the rest of the info about your quad.

15t will just make you have more speed and less bottom end. If your racing around any sort of track a lower gearing with more torque is worth it b/c you can snap the throttle and overcome someone else easier.

If your drag racing then topend is needed and a larger front sprockets good.

totally stock motor?

Id put it back to stock or drop a tooth. Your never gonna exceed topspeed in mx imho.

even with a built motor 15 tooth is tall stick with stock

my mechanic said this will let me pull away while others are maxed out

id keep it stock, if you want slightly more topend then id drop to a 37t rear sprocket.

go back down to 14. unless you are topped out with the 14, which is unlikely for an mx track, They are going to pull past you throughout the track because you wont find a spot to open it up.

will i notice a diff that much by only going up one tooth?

Yes. 1 tooth up front is equal to 3 in the back.
