A snorkel, and some planning.

If you've got an older ignition style, you still need to keep water out of the distributor. You also need to waterproof the various vents you have on your car, vents to your fuel tank, transmission, engine crankcase (which is often vented to the intake, so that's not a problem), and so forth. The potential problem areas obviously vary with each make and model.

But beyond that, yeah. It will run underwater all day long, and probably be real tough to overheat. :D

Was originally a 1.3 petrol but i soon ripped that out and fitted a 1.7td isuzu engine from a Vauxhall cavalier.

Yep diesel and he had a snorkel.
