do you think the oil pump is strong enough to work with a bigger oil cooler??

Shouldn't be a problem if I understand the oil circulation system correctly. The only concern I would have is that the system has enough oil to compensate for the delay in the return to the tank. Maybe an oversized oil tank like the Pingry one which also decreases your oil temp by design.
