02 400 ex main jet

how far do you screw out the main jet before using the lock -nut? was to far up and did bend the needle

The lock nut you're referring to is actually for the Needle jet holder. It has nothing to do with the Main jet. Put your needle jet in and screw the holder in till it is firmly seated on the needle jet (making sure that the needle jet is seated properly all the way into the carb. body), Then snug up the lock nut. Next screw in your main jet till it is firmly seated and your done. Do not over-tighten any thing on your carb. Just snug it up.
