Today I had it out, ripping for a few hours. With the E-fan on. I alway shut the fan off a few seconds before I shut the engine off. But even after doing that, I Went to start her today after a quick break and battery she would slow crank and didnt start... I push started, rode for 10 minutes without fan, shut it off, and it fired right back up... The fan is hooked up 100% correct, I know that... Could this be a charging issue?

A geuss with the info provided is that the battery itself is the culprit. If its older or in a weak condition, the added drain from the fan is using up more power then it can retain.
If you have a multimeter, check the charging current andalso check how far the voltage drops when the fan is turned on

I assume these are a 12 volt system? What voltage should I see charging? and how much voltage drop is acceptable with the fan on?

You'd have to look in a repair manual (I dont remember the numbers)
I worked in the battery industry for almost 20 years...I have done everything i can to forget it LOL
