share yours ive smoked em 4 times for pulled/chopped pork and the first time was golden but now it seems i cant get that same flavor

i wanna try something knew, ive been using charcoal with hickory chips but it seems to over power the shoulder, i wanna try pecan wood or oak

I do not smoke them, I slow cook in my oven half filled with water & cover with tin foil 250* about 6-8 hours. Salt meat, sprinkle Mrs Dashes flavorings all over, some celery & garlic salt, & rub Brown sugar all over like a rub. Place fatty part on bottom of pan, & thank me later, That is basically how i make our pulled pork sandwiches at our restaurant,
