Do 4+1's handle differently?

A little, but what are you looking to accomplish? Do you race XC or MX or what?

I don't race, just ride recreationally.

Stock arms? 4+1 wheels make you pretty narrow with stock arms.

I have a set of 3+2's I took off my 400ex, I just didn't know if I should put them on or get some 4+1's. Yes, I'm running the stock a-arms and don't plan on changing since I just ride for fun and mainly trails/woods.

I have run 3+2 and 4+1 on stock arms, and I would have to say the stock offset is fine. 4+1 had an advantage of fitting through trees with more room to spare, but it made it a little more tipsy.

I'll just stick with my 3+2's then

Yeah I ran 3:2's for a few years and then switched to 4:1's with the rest of the bike remaining the same and didn't notice any difference.
Might of noticed a difference if I didn't run a stabilizer i guess.

I had 3:2 rims and now i hve 4:1 and i notice a little bit better handling through rough stuff. Not much though. I mainly just did it to get my quad to 50 inches. It was 52 with 3:2

This is where you will notice the difference in offset the most - the rough terrain. A 4:1 wheel has less leverage on the steering stem than a 3:2 wheel. So when you catch a rut, rock, or root, you won't feel as much feedback through the bars.

i race tt and i ran 3-2s for the whole season until i went to a national, then i was too wide, when i practiced before, i would push quite a bit so i messed with my sway bar, then when i put on the 4-1s, i almost rolled it the first time i turned, it helped me out alot
