I honestly dont see what the point is...

When I had my '02 stock 400 I never used it
Now I have a '99 440 and I HAVE to use it every time

If the pilot jet size and fuel screw are tuned properly then you won't need the choke, even in the colder months. I removed mine and there is some improvement in throttle response. I think it's worth the 5 minutes that it takes to remove it.

What does removing the choke do exactly that could help performance, and i can barely get mine to start now, how in the world would you start it without the choke?

Removal of the choke does actually work. Its easy, painless and works better, never need a choke again.

Instead of the air having to go around the choke plate, it now has a straight shot into the carb.

The only real gain is throttle response and a lil burst in speed. Whether or not you really feel the difference depends on the person.
