Polishing is basically cleaning up the casting flaws in exhaust and intake ports of the head. Porting is actually removing material from the ports of the head, to increase the velocity of air/fuel mixture. It's OK, to polish up and smooth out the ports yourself. But I would leave porting to the professionals. Taking out just a little to much can actually rob you of power.
