I ride the southwest deserts as well. Over the years I have tried many different tires, but keep coming back to the ITP Holeshot XC! They are 4-ply front and 6-ply rear, and absolutely indestructible. I run Fix-a-Flat in them all the time, and that will seal any little thorn pricks....in a dozen years running these tires, I have never had a flat!!! http://www.itptires.com/sportatv/holeshot_xc.html

When I want more ground clearance, I will run the Holeshot XCT (after a gearing change) which are a little bit taller. Most desert racers will run something like the XCT's. http://www.itptires.com/sportatv/holeshot_xct.html

Also, I run the tires on ITP Baja rims. These are wider than stock and have a greater offset, and combined with the wider tires they make the quad several inches wider....for a real nice increase in stability (without the expense of buying a-arms, a new axle, new shocks, etc.). I highly recommend this combination! http://www.itptires.com/sportatv/t9_baja.html

That said, I would never recommend these as tires for the "dunes". While the Holeshots are a great all-around tire, in the dunes, you need to have some sand paddles (I prefer the extremely light buffed down Skat-Traks).
