will a 21x7-10 fit on a 10x5 rim

yes it will.
21 = tire size from top to bottom

7 = width of the tire

10 = tire size where the bead is. this must be the same as the rim size.

that is the only number that has to be the same. the other 2 you can play around a bit with.
