I am doing a top end rebuild and want a fresh bore, I think a 408 sounds good but dont know what bore that is. The 11:1 piston comes in standard 85.00mm bore, 85.50, 86.00, 87.00 and 88.00
What one is 408?

None of em'. I came up with:

85.0mm bore x 70mm stroke = 397.2cc
85.5mm bore x 70mm stroke = 401.9cc
86.0mm bore x 70mm stroke = 406.6cc
87.0mm bore x 70mm stroke = 416.1cc
88.0mm bore x 70mm stroke = 425.8cc

86, 87, and 88 are generally referred to as 406, 416, and 426.

I've read whenever you get your cylinder bored make sure the person doing the bore job has the piston that is going to be used so the exact tolerances can be met. I suppose whether or not this actually happens depends on the quality of the shop.

Yes I have heard the same thing, from the shop that is going to do my machine work. That is why I wanted to get the right size piston first so I can take it and the cylinder to the shop. I am also going to take my head in and have it freshened up maybe a hot shots stage one cam.
