i was curious if it's possible to repack the stock carrier bearings with grease and the front wheel bearings as well.

if so how often should this be done?

It is possible. All you have to do is get a very small screwdriver or something simmilar and take off the bearing seals, clean them out and repack them. I wouldnt do it on the rear just because they wear out so fast from so much side load pressure. If you look on ebay you can find bearing kits for super cheap, or pivot works makes pretty cheap kits also.
