I want to have my ps2 and x box connected to my tv at the same time. I only have on input on my TV so if I bought three of these would it work? Even the video one?

It could possibly work, but you may have problems with impedance mis-matching, ghosting, or worse yet, back feeding amplitude from the output of one console into the output of another.
I recommend something like this to switch between consoles.

Except your TV may not have s-video. Still may be a lot cheaper to just switch cables by hand every time.

I know you can find a video source switch with RCA outputs. I have seen them before at Radio Shack and Slave(wal)-mart

I figured something like that was made. I've been to my local wal mart and radio shack and they didn't have one.

Ah shibt. All I can find at Bust-Buy is the S-video type, or the RF modulator type.
Time to buy a $2500 HDTV I guess.
