Joe, I know your a chef, and John asked me how the garden goes it so far this year, so I am killing two birds with one post as it were.

Joe, I need a good squash/zucchini soup recipe

John, its doing swell ....lol

Squash, Zucchini, Onions, Potato's, jalapeno's, broccili, peas and strawberries are all grown and in the freezer or canned. Beans are up and we should be picking them in the next week or so. Second planting is in the ground and is up already as well.

I am dehydrating a ton of squash/zucchini. green tomatoe, onion and peppers for soup stock

as soon as the tomato's ripen, ill be making salsa. i have jalapeno, ancho, anahiem, chili, habenaro, tabasco ,cayanee, green, red and yellow bell peppers along with sweet and hot banana peppers all doing quite well at the moment, as long as the deer stay off them:p

Looks delicious Kenny! Personally I love grilling vegetables that have been soaked in Italian dressing. Squash, Zuchini, peppers, etc....

Looks like quite the haul you got there:D

I don't have a 'good' zucc soup recipe, usually just use them for filler in a vegetable soup or mabe a beef barley soup. At the dunes the other day I did some grilled zucc with bread crumb, parmesean & herb topping along with top sirloin and grilled potatoes:)

John's dish sounds good or you can make ratatouille, not talking about the movie:p

Here's a sample recipe:

2 tablespoons olive oil
2 cloves garlic, crushed and minced
1 large onion, quartered and thinly sliced
1 small eggplant, cubed
2 green bell peppers, coarsely chopped
4 large tomatoes, coarsely chopped, or 2 cans (14.5 ounces each) diced tomatoes
3 to 4 small zucchini, cut into 1/4-inch slices
1 teaspoon dried leaf basil
1/2 teaspoon dried leaf oregano
1/4 teaspoon dried leaf thyme
2 tablespoons chopped fresh parsley

PREPARATION:
In a 4-quart Dutch oven or saucepan, heat olive oil over medium heat. Add garlic and onions and cook, stirring often, until softened, about 6 to 7 minutes. Add eggplant; stir until coated with oil. Add peppers; stir to combine.


Cover and cook for 10 minutes, stirring occasionally to keep vegetables from sticking.
Add tomatoes, zucchini, and herbs; mix well. Cover and cook over low heat about 15 minutes, or until eggplant is tender but not too soft.
Serves 4.

lol, yeah we eat it many different ways, grilled, broiled, in soups, spahgetti sauces etc. someone told me about a soup based soley on zuccihini as the base and for the ofe of me i cant remeber it. ive got afew here, i was just hoping for someone who has one that they tasted and know to taste good etc:p

Maybe something like this....

A pot full of diced/chopped zucc
Water or stock to cover
Seasonings...thyme, basil, garlic, salt

Cook untill very soft

Puree

Add sauteed onion, celery and carrot and maybe some more diced zucc. S&P to taste.

Might turn out like a cream soup without the cream

Just an idea:D

joe that has got to be close, because i remeber the consistance was supposed to be close to split pea soup.

A few things i've done camping....

Whole pork loin on the camp fire
New York steaks on the camp fire
Grilled rosemary skewered prawns
Grilled portobella mushrooms
Caesar salad with fresh croutons

One of these days i'm going to do a whole prime rib roast on the camp fire:cool:

pappy if you have any string beans you should see if you can hunt down a recipe to pickle them because surprisingly enough they are great especially when you throw some sliced jalapeno in there to give them a little kick

lol..ill put up over 300 quarts of beans this year and easily a dozen pints of 3 bean salad:p

OMG thats 1qt of beans almost every day of the year!! i think ive found the source of global warming!:blah: lol

mmm...those yellow squash look good.. though instead of a soup/stew, im thinking sliced thin, flopped in wheat flour, pan fried, then coated with brown sugar.

lol yeah it averages out that way. but really, 3 or 4 quarts a week for us, then during cook outs, holiday dinners etc we may use up 4 or 5 quarts depending on the number of folks here etc.

and amen to fried squash!!!

Wifes recipe for Zucchini medley:

3 small Zucchini sliced
1 large bell pepper sliced
1 can diced tomatos
1 tomato cut up
garlic salt sprinkled on top
1 can tomato soup
a couple tablespoons of lemon juice
salt & pepper

mix all ingredients together in a bowl
cover and microwave for 15 minutes
I also like to sprinkle some grated peccorino romano cheese on top when served or you could use parmesan cheese if you like it.

yummy!

Obviously you can add or subtract whatever you want to make it to your own taste but this is one heck of a quick, easy, and tasty treat with dinner!

Kenny, you remind me of my brother whos 16 years older than me and when I lived with him for a few years when I was 15 to 19 years old. We did much of the same things you do. Big garden, canning, all kinds of hunting and camping adventures, rode dirt bikes alot in the woods. I bitc*ed then about the chores and such, but looking back now, we had so much fun, lots of love and laughter. Ahh good times.

JOEX i made me a very simple recipe today i took a bagel sliced it in half loaded one side with pepperoni, american cheese on the other(obviously you can use what you want) and i toasted it real good and put zesty italian dressing on it ... what a sandwich for the italian tastebuds

you'd prolly come up with a better type of cheese? got any ideas? also you do any portuguese cooking? shrimp mozambique? carne alentejana? malasadas? cacoula?

Provolone would be a good choice but anything besides the processed stuff:p

I'm not familiar with Portuguese cuisine but could become interesed....;)

This will be biased but the portuguese have the best food ever definatlt look into it i dunno how many portuguese are in your area but definatly look into their food carne alentejana is probably the tastiest thing that will ever touch your tongue

Tonight is back to pickles, dill and dill whole:blah: pickles

this is the 3rd batch of this sze off the row and with the drought im pretty happy with it. this should do it for the cukes, from here on out they get eaten in salads etc:D

pappy cukes with range dressing is always good =p but how do u make jam out of the peaches also is there a difference between jelly and jam

jelly is made with juice from the friut, jam is made with the fruit minus the skin (and seeds if you like) we made jelly, jam and chunk jam(wifes favorite)

as far as cukes, we usually have some sliced, in vinager and ranch dressing with onions...served COLD:p

they both should have about the same consistancy, with jam having small chunks of the fruit through out etc

me and the deer are going to tango:mad: last night they ate 3 new rows of beans, 3 jalapeno plants peppers and all and EVERY tomato on the vine (32 plants!!!)

i salavaged my sweet peppers and anchos and anaheims:ermm:
