how much can you skim off a head on a 2002 400ex mine has some pitting in and want to clean it up

if its stock you should be able to go atleast a couple thousandths. I have a 12.5:1 piston, and I took a thousandth off of my head and had no problems.

how much would it raise the compression ratio by shaving one thou off the head?

I couldnt tell you that, you would have to cc your engine after you got it put together.
