I have been told that my 300ex is to rich. IF i remove my choke would this lean out my motor or just make it more rich? THanks

It may lean it out a tad bit, but not noticeable.

why not just rejet it, which would be the correct way to solve your problem?

What filter are you running.

I'd wager you should be between a keihin 128-132 w/ aftermarket filter and no intake box lid.

Lid on 122-128

just rejet the carb i took off the choke and didn't notice any difference
