Port and polish will increase the airflow intake into the motor, you can port the engine many different ways in order to achieve different areas of power. A "mild" port and polish job would probably be suitable for your application. Porting the head is one area where you dont want to "half ***" it........a bad port job can hurt an engines performance severely!!
