...but I'd like to do some research first. Can anyone point me to some good forums regarding street bikes/choppers in general, or even some parts companies that sell fenders, etc...

I can't remember any off hand, but I did a search on google a while back and came up with tons! Lots of info out there, books and stuff to. Should be a good fun project! Good luck!
