would anyone put performance parts on a 250ex and if so what

The 250EX is a nice quad to ride around, but I would personally, not put any money into performance parts for it. I would buy a 250X or 300EX, either way you get a bigger engine and manual clutch. plus they are EASY to find parts for.

250EX-229cc (should be called a 230EXlol)
250X-246cc
300EX-282cc

But that's just my 2cents. but if you must a good pipe and filter wouldn't hurt.
