Will my stock starter turn over a true 300 with a 12:1 compression piston?

It should turn over the 300 @ 12:1 just fine once it's broken in.

It's probably gonna struggle until you get a couple hours on the rings.

I had to pull start my 330 a couple times when it was still fresh. ;) Turns over like a charm now though.

What kind of gas would you reccomend I run? I have it at a true 300 right now, but im not sure if I should go a little more. It needs honed, and it might need to be bored a little more. How much more should I go?

With a 12:1.. just a guess (pulling it out of my butt).. but I beleive you'd want in the 96-98 octane range.

11:1 will run on pump premium (barely).

Could get some VP red (to save money) and mix it 50% racing, 50% premium.
