They should. The standard O.D. of handlebars is 7/8". The only other size you'll ever encounter is 1 1/8" (those are the fat bars that don't typically have a crossbar).

Does it matter what kind of grips i get?

No. Those dimensions are for the clamping portion of the bar only.

Although, quad grips are often different than dirtbike grips because of the thumb throttle vs. twist throttle. The right grip for m/c grips is a little bit bigger I.D. to accomidate the twist throttle. I think some brands it may not matter, but others have ATV and m/c specific grips.
