what are you refering to as a chain tensioner? The 300ex does not come with one?

the thing behind the sprocket.. if u turn it the chain will get tighter and when i do it just moves back instead of stayin tight

alright, thats the chain adjuster. a tensioner is a spring loaded roller that puts tension on the chain. Well if that keeps coming loose, make sure that the bearing stop bolt is in the back of the swingarm and that you are tightening the two allens bolts on the rear of the swing arm all the way.

Are you doing all of that.?

if you go to the back of the swing arm, and go to the center and follow that down to the under side, on the way you should find a bolt. If its not there, you need to get one cause that keeps the carrier from rotating.

i was having the same problem. sometimes the stock carrier will wear out and even though u tighten the allen bolts as tight as u can it will still move. a different carrier should stop ur problems. if it doesnt then i dont know what to tell u.
