You may have to check out the Mid East Series, they run in NC, SC, and I think they have an event in TN. www.mideastinterstate.com

Its not a track, but Buffalo Mtn (near Johnson City, I beleive) had about 14 miles of trail that was mostly passable by ATV.

14 miles in, 14 miles out.
