Does anyone run a Sparks advance key with 11:1 piston in a 400ex? what is it like help or hurt?

you can run the degree key but it will make the engine run hotter.

hot enough to hurt it? do you gain a lot with it?

I ran one with my 11:1. It did run a little hotter, but not too bad. The difference is in your throttle response. It's there just a little bit quicker. It's not a huge gain, but a small, noticeable one. For the cost I think it was worth it, but I did not have any problems.
