What kind of Amsoil synthetic does everybody run? Is there any specific kind to look for?
Is it still 10w40 for winter and 20w50 for summer?

For a modified air cooled (high comp, porting, cam, etc.) I'd run the ir cooled (v-twin) 20w50 in the summer, and ATV 0w40 in the winter.
For a nearly stock motor, just run the ATV 0w40 year around.
Sounds like you'd be in the "nearly stock" motor catagory. I'd just run their 0w40.
