my 300ex pipes get cherry red when it runs do you have any ideas why

Sounds like you might want to rejet a little richer. It's running lean.

i would guess jetting.

Its lean. I wouldn't run it like that. If the header is head the engine internals are glowing red or even white.

its not rich its fightin for gas
