Al Baker's XRs Only website has one available for the 400EX. It's a flush style with a range of 50F to 350F degrees. www.xrsonly.com :D

How hot is the oil suppose to be?

Any number of factors can lend to higher or lower temperatures but, generally 225F to 275F is to be expected. Over 300F and some oil start to break down.

what is a dangerous temperature, and what temperature is considered warmed up, or operating temp?

I have read several places that over 300 degrees oil starts to break down. I would start to get uneasy if I saw my temperature rising above 275 and I would definitely call it quits if I see it over 300. You have to stay on top of your oil changes and get air scoops. 225 to 275 is what I see when I ride in 80 degree weather. I'd guess that anywhere between 175 and 225 would be "warmed up".

Try the stock dip stick if you still have it. If it fits, than any 400ex temperature oil cap should fit. They are $40.00 at XRs Only website.

wait, we're trying to get a measurement of the oil temp as it leaves the oil cooler, tank, or motor? i would think its more important to know what the temp is from the motor, this would tell us where the oil is running, not after its been cooled.........
