if it looks like a "red gel" in the middle of the steak thats a little too rare for me

I prefer medium to medium rare - depends on the quality of the steak.

Also, if its a good steak - NO seasoning for me. Great steaks need nothing but a good grill.

In my experience, most people have no clue whatsoever about the tempuratures of steak. In fact, I've seen a lot of people that order medium rare and have no clue what it actually means. They only order medium rare because that's what everybody else orders.

Rare - Pink, with a cool red center.

Medium rare - Pink, with a warm red center.

Medium - pink center, no red. Still very juicy

Medium well - Brown, slightly pink center.

Well done - no pink.

Me personally, I like a good Medium. You get all the flavor from the grill, it's still very juicy, but no red center. In reality, I've seen a LOT of people order a mid-rare, when they are really thinking of a medium.

I agree with wilkin. I used to work at a steakhouse also.....I don't like to eat steak at home, cause where I used to work made their own special seasoning and the recipe is top secret. I'm a medium well fan myself...........
