12x8 or 11x10 rims?

Okay, Im going to be purchasing a new set of Sand Tires with Douglas rims. I have a choice between 12X8, 11x8, or 11x10 rims with Sand Sharks mounted on them. Should i get paddles that have the V pattern(Sand Sharks) or the ones with straight paddles (Sand D or Dune Hopper)? Im only going to need these things for like 3 weeks cuz im going on Vacation to Arizona to ride in the Glamis area. Also, should i get 20" or 21" tires (i currently have 20" stock tires on my quad). Well, any help would be appreciated. THanKS!
