I have a stock 400ex, I read on this site that if you remove the bottom cylinder gasket and replace head gasket with xr 400 gasket, then compresion would be close to 11:1 . True or false? Also does it matter what year of xr?

with a stock piston, heck no. i would consider doing this even on a stock bike though. a more efficient burn and a better flame travel across the top of the piston can be the results.

so I should not do this ,or I should but with a new piston?

you can do it either way. you may not feel a huge gain if you don't have another piston, but i guess you could at least put in a thin head gasket and a nice drop in cam. this way you don't need to remove the cylinder or touch the piston. yes, an aftermarket piston will be best for the power output but we all can't have everything.
