I know this may sound stupid but when the air/fuel screw is turned in more is that more fuel or less? Also is there a good aftermarket carb I can buy that is easier to adjust than the stock carb?

Turning the screw in will make it leaner and out will make it richer. Sorry but the stock carb is about as easy as it gets.
