Why does my ex heat up so fast when there is the right amount of oil in it.

just seatting there idleing for 2-3 minutes the bike is hot

If you don't have a temp guage its going to be hard to tell if the bike is really getting to hot.

I think oil starts to break down around 300 degrees.. and a normal operating temp of 180 I would say would be ok, mine runs 175.

Its an air cooler machine so... if theres no air moving past it its going to get hot quick.

If you bike is running to hot it could be jetted to lean.

Lean jetting would be the most likely "problem" if there is one. Other than that, just sitting and idling will make anything get pretty hot, especially an air cooled motor. There's not very much air flowing over the motor and oil cooler when you're just sitting there, and when you're just idling, the oil flow to the top-end isn't quite as good as it is at higher RPM.
