I would like to know how hard it is to get the color off blue Renthal bars. I can get some old ones that are scratched up and would look better it they were just striped and polished. Any ideas? Will it come off with paint striper or will I have to use sand paper or something else?

Find someone with a 'bead blaster' It is a small booth that uses different mediums to "sandblast" the part. It should shine nicely after the paint is off--maybe have Chris Waters powdercoat it.

Dont bead blast it it will make it dimpled, unless you plan on having it powdercoated but then it will most likey chip after a while. Bead blasting eats away at soft metals like aluminum. I would suggest taking a some fine sandpaper and sanding it off then use some mothers polich to shine it up. I did this to mine and it looks like chrome, proably looks better than when it was brand new.

Oven cleaner strips off anadizing. Use it in a well ventilated area though and mabey wear some sort of mask because that crap smells bad.
