What could cause a 300ex to stall right after doing a wheelie, or after going up big hills. It also stalls in low RPMs.

Check the spark plug first before you tear into the carb/electrical ... 1. it is easier 2. it is cheaper.
You said it stalls... blubbers then stalls? revs then stalls or just shuts off... each type of stall hints at what might be the problem.

Simple solution= one of the vent hoses was clogged...:grr:
