no, a 200 is way off. i don't know what your elevation or the temperature is that you ride in??? a good general starting point is a 152-155 mainjet with the lid on. with it off you could try a 155-158.

yeah i know their site says that. if you call them i bet they tell you to use something smaller than that. however, what they say is still too big in my opinion. if you go something that big the power will be like crap. the bike may run fine with that big of a jet but just slow. some people listen to their specs but i never would. everyone has their own opinion though. :)

The reason they tell you to jet a little higher than needed is so they are not responsible for you jetting to lean and burning up your motor:huh

I would go 160 and if its fat back it off. Im at 185 with a 426 kit, Hotcam 2, Heavily ported and a x-6 exhaust at 2400 ft

I believe HMF recommends for their full system pipes:

180 with air box lid
190-200 w/o air box lid

I'd try the 190, then if it doesn't run like you want then try the 200. But I think the 200 might be a little too much, IMO.

You should need a 155 at least, I would try a 165 without the airbox lid (thats what I run) and if it cuts out when you are wide open in the upper revs, back off to a 160 and that should do ya. Although with the lid on there you might need to go down to a 155 depending on lots of little things. One of the three should work, exnay on the 200-ay there friend.
